Drain the tofu, wrap it in a clean kitchen towel, and place a heavy object on top for 15 minutes to press out excess moisture. Once pressed, cut the tofu into 1-inch cubes.

Peel and finely grate the ginger. Mince the garlic. Thinly slice the red bell pepper and chop the green onions into 1-inch pieces.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, brown sugar, cornstarch, and water to create the sauce. Set aside.
