Wash the beets thoroughly to remove any dirt, then trim off the root and leafy tops. Place the beets on a sheet of aluminum foil and drizzle with 1 tablespoon of olive oil.

Wrap the beets tightly in the foil, creating a sealed packet. Place the foil packet on a baking sheet and roast in the preheated oven for 40-45 minutes or until the beets are tender when pierced with a knife.
