Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a medium bowl, combine low-fat cream cheese, sugar, vanilla extract, lemon juice, and egg yolk. Mix until smooth and creamy.
Lay one phyllo dough sheet on a clean surface and lightly brush with unsweetened applesauce. Top with a second sheet, and continue layering and brushing until all 8 sheets are used.
Cut the layered phyllo sheets into 8 equal rectangles.
Place a tablespoon of the cream cheese mixture onto the center of each rectangle.
Fold the corners of each rectangle towards the center to cover the filling, pressing gently to seal.
Transfer the filled pastries to the prepared baking sheet.
In a small bowl, whisk the egg white and brush it over the top of each danish. Sprinkle a pinch of cinnamon over each pastry.
Bake in the preheated oven for 18-20 minutes, or until the pastry is golden and crispy.
Remove from the oven and let cool for a few minutes.
Dust with powdered sugar before serving.
