📝 Instructions

10 steps
1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

2

While the pasta cooks, heat a large skillet over medium heat. Add the diced pancetta and cook for 4-5 minutes, stirring occasionally, until crisp. Remove the pancetta with a slotted spoon and set aside on a plate lined with paper towels.

3

In the same skillet, add the olive oil and 1 tablespoon of butter. Once hot, add the shrimp in a single layer. Season with salt, pepper, and red pepper flakes (if using). Cook for 1-2 minutes per side, or until the shrimp are opaque and pink. Remove the shrimp and set aside.

4

Reduce the heat to medium-low. Add the remaining tablespoon of butter to the skillet and melt. Stir in the minced garlic and cook for 30-60 seconds, or until fragrant.

5

Pour in the white wine and bring to a simmer, scraping the bottom of the pan to deglaze. Allow the liquid to reduce by half, about 3-4 minutes.

6

Reduce the heat to low and stir in the heavy cream. Let the sauce gently simmer for 2-3 minutes, stirring occasionally, until it starts to thicken.

7

Add the grated Parmesan cheese to the sauce, stirring until melted and smooth. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.

8

Stir the pancetta, shrimp, lemon zest, and chopped parsley into the sauce. Add the drained linguine and toss to coat evenly.

9

Taste and adjust the seasoning with additional salt or pepper, if needed.

10

Serve the linguine hot, garnished with extra Parmesan cheese and parsley, if desired. Enjoy!
