Wash and pat dry the lemons thoroughly to remove any dirt or wax. Using a microplane or fine grater, carefully zest the lemons, avoiding the bitter white pith beneath the peel.

In a clean, dry saucepan, gently heat the olive oil over low heat until it is just warm to the touch, around 40Β°C (104Β°F). Do not allow the oil to boil or simmer.

Remove the saucepan from heat and add the lemon zest, limoncello liqueur, and the optional garlic clove. Stir gently to combine.

Let the mixture cool to room temperature. Once cool, pour the oil through a fine mesh sieve or cheesecloth into a sterilized glass bottle or jar to remove the zest and garlic pieces.

Seal the bottle tightly and store in a cool, dark place. The oil can be used immediately but will develop a deeper flavor after infusing for 24-48 hours.
