Thoroughly wash the lemons under warm water, scrubbing to remove any wax or residue. Dry them completely with a clean towel.

Using a vegetable peeler, carefully remove the zest from the lemons, avoiding the white pith as it can make the limoncello bitter. Aim for long, thin strips of zest.

Place the lemon zest into a large glass jar or container with a tight-fitting lid. Pour in the Everclear or vodka, ensuring the zest is completely submerged.

Seal the jar tightly and store it in a cool, dark place for 7-10 days. Shake the jar gently once a day to infuse the alcohol with the lemon oils.

After the infusion period, prepare the simple syrup: In a medium saucepan, combine the granulated sugar and filtered water. Heat over medium heat, stirring until the sugar has completely dissolved, about 5 minutes. Remove from heat and let the syrup cool to room temperature.
