If using dried rice noodles, soak them in warm water for 30 minutes or until softened, then drain and set aside. If using fresh rice noodles, separate them gently and set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the rice noodles and stir-fry for 3 minutes, adding the soy sauce and dark soy sauce for flavor and color. Remove the noodles from the pan and set them aside.

In the same skillet or wok, add the remaining 2 tablespoons of vegetable oil and heat over medium-high heat. Add the minced garlic and stir-fry until fragrant, about 30 seconds.

Add the thinly sliced chicken or pork to the skillet and stir-fry until cooked through, about 3-4 minutes.

Stir in the chopped broccoli or Chinese broccoli and cook for 2-3 minutes until the vegetables are tender yet still crisp.

Pour in the chicken stock and bring it to a simmer.

In a small bowl, mix the cornstarch with 3 tablespoons of water to create a slurry. Gradually add the slurry to the skillet, stirring constantly to thicken the sauce.

Once the sauce has thickened, season it with oyster sauce, fish sauce, and sugar. Taste and adjust the seasoning if necessary.

To serve, place portions of the stir-fried noodles on serving plates. Ladle the thickened sauce with meat and vegetables over the noodles.
