Peel and dice the kumera into roughly 2 cm pieces.
Bring a pot of water to a boil, add the kumera, and cook until tender (about 10-12 minutes).
Drain the kumera and mash it in a large bowl until smooth. Allow to cool for a few minutes.
Drain the canned tuna thoroughly and flake it with a fork.
Add the tuna, breadcrumbs, egg, finely chopped onion, parsley, garlic, salt, and pepper to the mashed kumera. Mix until well combined.
Divide the mixture into 8 even portions and shape each portion into a patty about 1.5 cm thick.
Heat olive oil in a large skillet over medium heat.
Fry the patties in batches for 3-4 minutes on each side, or until golden brown and heated through.
Place the cooked patties on a plate lined with paper towels to drain any excess oil.
