Crispy, golden, and bursting with bold Mediterranean flavors, the Tunisian Brik is an irresistible appetizer or snack that will transport your taste buds straight to North Africa. This recipe features delicate spring roll wrappers (or traditional brik pastry) filled with a savory blend of seasoned tuna, briny capers, and fresh parsley, with a silky whole egg nestled in the center for a decadent twist. Each brik is carefully folded, fried to perfection, and served piping hot for a satisfying crunch in every bite. A splash of lemon juice enhances the bright, tangy undertones, while a dollop of spicy harissa offers customizable heat. Ready in just 25 minutes, this easy yet impressive dish is perfect for entertaining or a unique Mediterranean-inspired treat.
In a medium-sized bowl, combine the drained tuna, chopped parsley, and capers. Stir to mix evenly.
Add the juice of one lemon, salt, and black pepper to the tuna mixture, and stir well.
Lay a spring roll wrapper flat on your work surface. Place about 2 tablespoons of the tuna mixture in the center, creating a small well in the middle for the egg.
Carefully crack an egg into the well, keeping the yolk intact.
Fold the edges of the wrapper over the filling into a triangle or square shape, pressing gently to seal. Repeat for all wrappers.
In a deep frying pan or pot, heat the vegetable oil to 180Β°C (350Β°F). Test it by dropping a small piece of pastry into the oilβit should sizzle immediately.
Carefully slide one or two briks into the hot oil, ensuring they are not crowded in the pan. Fry for 1-2 minutes on each side, or until the wrapper is golden brown and crispy.
Remove the briks with a slotted spoon and place them on a plate lined with paper towels to remove excess oil.
Serve immediately while crispy, with a dollop of harissa if desired for an extra kick of spice.
