In a large mixing bowl, combine the lukewarm milk, sugar, and dry yeast. Stir gently and let it sit for 5 minutes until the mixture becomes frothy.
Add the flour and salt into the bowl, and mix until a dough starts forming. Knead the dough for 8-10 minutes until smooth and elastic.
Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour, or until it doubles in size.
While the dough is rising, place the unsalted butter between two sheets of parchment paper and roll it out into a rectangular sheet approximately 1 cm thick. Refrigerate until firm.
Once the dough has risen, roll it out on a lightly floured surface into a large rectangle, about 1 cm thick.
Place the cold butter sheet in the center of the dough. Fold the dough over the butter from all sides, fully enclosing it.
Roll out the dough and butter package into a rectangle, then fold it into thirds like a letter. Wrap it in plastic wrap and refrigerate for 30 minutes. Repeat this process of rolling and folding two more times, chilling the dough for 30 minutes in between each round.
After the final refrigeration, roll out the dough into a large rectangle about 3-4 mm thick and cut it into triangles.
Crumble the feta cheese and place a small amount at the base of each triangle. Roll the triangles tightly from the base to the tip to form croissants.
Place the croissants on a baking sheet lined with parchment paper, cover with a kitchen towel, and let them rise for 30 minutes.
Preheat your oven to 190°C (375°F).
Brush the croissants with a beaten egg and sprinkle sesame seeds on top if desired.
Bake the croissants in the preheated oven for 18-20 minutes or until they are golden brown and cooked through.
Allow to cool slightly before serving. Enjoy your Krouasan Me Feta warm or at room temperature!
