📝 Instructions

9 steps
1

Slice the kielbasa into 1/2-inch rounds. Cut the cabbage into wedges, core it, and chop into bite-sized pieces. Peel and dice the onion, and slice the carrots into thin rounds. Mince the garlic cloves and peel and cube the potatoes.

2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the kielbasa slices and cook until lightly browned, about 5 minutes. Remove the kielbasa and set aside.

3

In the same pot, add the diced onion and sliced carrots. Sauté for about 3 minutes until the onion begins to soften.

4

Stir in the minced garlic, paprika, and dried thyme. Sauté for another 1 minute until fragrant.

5

Add the chicken broth to the pot, scraping the bottom to deglaze any browned bits. Bring the mixture to a simmer.

6

Stir in the cabbage, potatoes, salt, black pepper, and bay leaves. Cover the pot and simmer for 15 minutes, stirring occasionally.

7

Return the browned kielbasa to the pot and continue simmering for another 15 minutes, or until the potatoes are fork-tender and the flavors are well combined.

8

Remove the bay leaves. Taste and adjust the seasoning with more salt and pepper if needed.

9

Serve the stew hot, garnished with fresh parsley if desired. Enjoy with crusty bread for a complete meal!
