Preheat your oven to 180Β°C (350Β°F) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.

Add the egg yolks and vanilla extract, and continue to beat until fully incorporated.

In a separate bowl, sift together the all-purpose flour, baking powder, and salt.

Once cooled, spread about 1 teaspoon of jam onto the flat side of each whole cookie (the bottom half).
