Drain the canned tuna thoroughly and place it in a medium mixing bowl.
Add the panko breadcrumbs, egg, Parmesan cheese, minced garlic, parsley, sun-dried tomatoes, lemon zest, salt, and black pepper to the bowl.
Mix all the ingredients together until well combined.
Divide the mixture into 4 equal portions and shape each portion into a patty about 1/2-inch thick.
Heat olive oil in a large skillet over medium heat.
