In a medium mixing bowl, beat the egg yolks and 40 grams of sugar with a hand mixer until the mixture is pale and thick (about 2 minutes).
Add the mascarpone cheese, Greek yogurt, and vanilla extract to the yolk mixture. Beat until smooth and creamy, ensuring there are no lumps. Set aside.
In a clean bowl, whisk the egg whites until soft peaks form. Gradually add the remaining 20 grams of sugar and continue whisking until stiff peaks form.
Gently fold the whipped egg whites into the mascarpone mixture in three additions, ensuring the mousse stays light and airy.
In a shallow dish, combine the cooled espresso (or coffee) with the coffee liqueur, if using.
