Bursting with bold, rustic flavors, Italian Hash is the ultimate one-pan wonder, perfect for breakfast, brunch, or even dinner. This hearty recipe combines golden, crispy potatoes with savory sweet Italian sausage, colorful bell peppers, and juicy grape tomatoes, all seasoned with aromatic garlic, oregano, and basil for an authentic Italian flair. Fresh spinach adds a nutritious touch, while a generous sprinkle of grated parmesan cheese ties everything together in creamy perfection. Top it off with a fried or poached egg for an optional indulgence, and finish with chopped parsley for a vibrant garnish. Quick to prepare in just 45 minutes, this comforting yet elevated dish serves four and is an ideal choice for a hearty, flavor-packed meal.
Heat a large skillet over medium heat and add 2 tablespoons of olive oil and 1 tablespoon of unsalted butter.
Once the butter has melted, add the diced potatoes to the skillet. Season with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden brown and crispy. Remove the potatoes from the skillet and set them aside.
In the same skillet, add the sweet Italian sausage (with casings removed). Break it up into small pieces with a wooden spoon and cook for 5-7 minutes until fully browned. Remove the sausage from the skillet and set aside.
Add the diced onion, red bell pepper, and green bell pepper to the skillet. Sauté for 3-4 minutes until softened.
Stir in the minced garlic, dried oregano, dried basil, and crushed red pepper flakes. Cook for 1 minute until fragrant.
Add the halved grape tomatoes to the skillet and cook for another 2-3 minutes until slightly softened.
Return the crispy potatoes and cooked sausage to the skillet, then stir in the fresh spinach. Cook for 1-2 minutes until the spinach wilts.
Sprinkle the grated parmesan cheese over the mixture and stir until evenly combined. Taste and adjust seasoning with more salt and pepper, if needed.
If desired, fry or poach eggs separately and serve them on top of the hash.
Garnish with freshly chopped parsley before serving. Enjoy!
