Peel the potatoes and chop them into evenly sized chunks for even cooking.
Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt.
Bring the water to a boil over high heat, then reduce the heat to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.
While the potatoes cook, chop the scallions finely, both the white and green parts.
In a small saucepan, combine the milk and 4 tablespoons of butter. Heat over low heat until the butter is melted and the mixture is warm but not boiling. Stir in the chopped scallions and let them infuse for 5 minutes. Remove the saucepan from heat.
Once the potatoes are cooked, drain them thoroughly and return them to the pot. Allow them to sit for 1-2 minutes to let any remaining moisture evaporate.
Using a potato masher or ricer, mash the potatoes to your preferred consistency.
Pour the warm milk and scallion mixture into the mashed potatoes a little at a time, stirring until combined. Continue until the mixture is creamy and smooth.
Season the champ with salt and black pepper to taste, and stir well.
Transfer the champ to a serving bowl. Use the back of a spoon to create a small well in the center, and place the remaining 2 tablespoons of butter in the well to melt for that iconic Irish touch.
Serve warm as a side dish and enjoy!
