Ingredients

  • 900 grams Yellow potatoes
  • 60 ml Extra virgin olive oil
  • 30 ml White wine vinegar
  • 5 ml Dijon mustard
  • 1 clove Garlic clove
  • 15 grams Capers
  • 20 grams Fresh parsley
  • 10 grams Fresh basil
  • 2 stalks Green onions
  • 5 grams Salt
  • 2 grams Black pepper

Directions

Step 1

Wash the potatoes thoroughly and place them in a large pot. Fill the pot with enough water to cover the potatoes by about 2 cm.

Step 2

Add a pinch of salt to the pot and bring the water to a boil. Reduce the heat to a simmer and cook the potatoes for 10-15 minutes, or until they are fork-tender.

Step 3

While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, minced garlic (use a garlic press or finely chop), salt, and black pepper. Set aside.
