Peel the potatoes and cut them into thick chips, roughly 1.5 cm wide.
Place the cut chips into a large bowl and rinse them under cold water to remove excess starch.
Fill a large pot with water, add the white vinegar, and bring it to a boil.
Add the chips into the boiling water and cook for about 5 minutes until they are slightly tender but not fully cooked.
