📝 Instructions

9 steps
1

Pat the pork roast dry with paper towels and season it generously with salt and black pepper on all sides.

2

Heat the olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until golden brown, about 2-3 minutes per side. Remove from the skillet and set aside.

3

In the same skillet, sauté the minced garlic and diced onion for 2-3 minutes until softened and fragrant. Remove from heat.

4

Place the carrots, baby potatoes, and sautéed onion and garlic at the bottom of a large crock pot to create a vegetable bed for the pork.

5

Nestle the pork roast on top of the vegetables and add the fresh rosemary and thyme sprigs around the roast.

6

In a small bowl, combine the chicken or vegetable broth, red wine (if using), and Worcestershire sauce. Pour the mixture over the pork roast and vegetables.

7

Cover the crock pot with the lid and cook on low heat for 8 hours, or until the pork is tender and easily pulls apart with a fork.

8

Once cooked, remove the pork roast from the crock pot and let it rest for 10 minutes before slicing or shredding.

9

Serve the pork roast with the vegetables and spoon some of the juices from the crock pot over the top for added flavor.
