Preheat a grill pan, skillet, or outdoor grill over medium-high heat.
Divide the ground beef into a 4-ounce portion and form it into a round patty about ½ inch thick. Season both sides with salt and black pepper.
Grill or cook the beef patty on the preheated surface for about 3-4 minutes per side, or until it reaches an internal temperature of 160°F for medium doneness. If using cheese, place the slice on top of the patty during the last minute of cooking to allow it to melt.
While the beef cooks, lightly butter each side of the sesame seed bun and toast them on the grill or skillet until golden brown.
Spread mayonnaise evenly on the inside of the top and bottom buns.
On the bottom bun, layer the shredded lettuce, tomato slices, and pickle slices.
Add the cooked beef patty on top of the pickles. Drizzle a teaspoon of ketchup and a half-teaspoon of mustard on the top of the patty.
Place the top sesame seed bun on the burger. Press down gently to secure the burger layers.
Serve immediately with your favorite side dishes, such as fries or onion rings.
