Place the saucepan over medium heat and stir until the sugar dissolves completely, forming a simple syrup. Remove from heat and allow it to cool completely.
In a medium mixing bowl, combine 500 ml of freshly squeezed ruby red grapefruit juice, 120 ml of Campari, 1 teaspoon of grapefruit zest, and the cooled simple syrup. Mix until well combined.
Pour the mixture into a shallow, freezer-safe dish (a standard glass or metal baking dish works well).
Place the dish in the freezer and let it freeze for 30 minutes.
After 30 minutes, use a fork to scrape the partially frozen mixture, breaking up any ice crystals.
Return the dish to the freezer and repeat the process of scraping with a fork every 30 minutes for about 3-4 hours, or until the granita has a fluffy, crystalline texture.
