In a large bowl, combine gram flour and rice flour. Add salt, carom seeds, and 1 tablespoon ghee (or oil).

Gradually pour water into the flour mixture and knead into a firm dough. Cover and let it rest for 20 minutes.

Divide the dough into equal-sized balls (about 10-12). Flatten each ball slightly.

Once roasted, peel the skin off the brinjal, tomatoes, and potatoes. Mash them together in a bowl.

Add green chilies, ginger, garlic, chopped coriander leaves, lemon juice, and mustard oil to the mashed mixture. Mix well to make the choka.
