9. For the chokha, roast the aubergine and tomatoes over an open flame or in the oven until the skin is charred and the flesh is soft. Remove from heat and peel the charred skin.

11. In a mixing bowl, combine the mashed potatoes, roasted and peeled aubergine and tomatoes, chopped onion, turmeric powder, red chili powder, 1 tablespoon mustard oil, and salt.
