πŸ“ Instructions

7 steps
1

Wash and hull the fresh strawberries. Pat them dry with a paper towel. Set aside 2 cups of whole strawberries to use as-is and slice the remaining 4 cups of strawberries in half or quarters for easier distribution in the pie.

2

In a medium saucepan, combine sugar and cornstarch. Stir well to avoid lumps. Gradually whisk in the water and cook over medium heat until the mixture thickens and becomes translucent, about 5-7 minutes.

3

Remove the saucepan from the heat. Stir in the lemon juice and vanilla extract. Allow the glaze to cool for 5-10 minutes, but do not let it set completely.

4

Place the whole strawberries in the bottom of the pre-baked crust, arranging them in a single layer. Add the sliced strawberries on top, distributing them evenly until the crust is filled.

5

Pour the warm glaze evenly over the strawberries, making sure to coat all the fruit. Use a spatula to spread the glaze gently if necessary.

6

Refrigerate the pie for at least 4 hours, or until the glaze is fully set.

7

Before serving, pipe or dollop whipped cream on top of the pie or around the edges for garnish, if desired.
