Preheat your oven to 325Β°F (165Β°C).

Place the ham on a roasting rack inside a large roasting pan. Using a sharp knife, score the surface of the ham in a crisscross pattern, cutting about 1/4 inch deep. Stud the ham with whole cloves by pushing them into the scored cuts.

In a medium saucepan, combine brown sugar, honey, ground ginger, grated fresh ginger, soy sauce, apple cider vinegar, Dijon mustard, and water. Heat over medium heat, stirring regularly, until the brown sugar dissolves and the glaze becomes smooth. Remove from heat and set aside.

Brush the ham generously with about half of the ginger glaze. Cover the ham loosely with aluminum foil to prevent over-browning.

Bake the ham in the preheated oven for 1.5 to 2 hours (or approximately 15–20 minutes per pound), basting with the remaining glaze every 30 minutes. Remove the foil during the last 30 minutes of cooking to allow the glaze to caramelize.

The ham is done when an instant-read thermometer inserted into the thickest part of the meat (not touching the bone) reads 140Β°F (60Β°C).

Remove the ham from the oven and let it rest for 10–15 minutes before carving. Transfer to a serving platter and drizzle with any remaining glaze from the pan.
