  • 1 lb Shrimp, peeled and deveined
  • 4 cups Broccoli florets
  • 3 tbsp Olive oil
  • 4 pieces Garlic cloves, minced

  • 2 tbsp Lemon juice, freshly squeezed
  • 0.25 cup Grated Parmesan cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 1 cup Pasta cooking water (reserved)

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water and then drain the pasta.

2. While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

3. Add the shrimp to the skillet and season lightly with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

4. In the same skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, or until fragrant.

5. Add the broccoli florets to the skillet, along with a splash of the reserved pasta water. Cover and steam the broccoli for 4-5 minutes, or until tender but still bright green.

6. Return the cooked shrimp to the skillet and stir to combine. Add the drained pasta to the pan.

7. Drizzle the pasta with the lemon juice and toss everything together. Add more reserved pasta water as needed to help coat the pasta in the sauce.
