📝 Instructions

8 steps
1

Preheat your oven to 180°C (160°C fan) or 350°F. Line a 20cm x 20cm (8-inch square) baking tin with parchment paper.

2

In a medium saucepan, melt the butter, golden syrup, and light brown sugar over low heat, stirring occasionally until smooth and combined. Remove from heat.

3

Add the rolled oats, chopped dried apricots, raisins, dried cranberries, sunflower seeds, desiccated coconut, and vanilla extract into the saucepan. Mix thoroughly until all the ingredients are evenly coated in the syrup mixture.

4

Pour the mixture into the prepared baking tin. Use the back of a spoon to press and smooth it down into an even layer.

5

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. The center may still look slightly soft but will firm up as it cools.

6

Remove the tin from the oven and allow the flapjack to cool completely in the tin. This will take about 1 hour.

7

Once cool, lift the flapjack out of the tin using the parchment paper. Slice into 12 even bars or squares using a sharp knife.

8

Store the fruity flapjacks in an airtight container at room temperature for up to 1 week. Enjoy as a snack or on-the-go breakfast!
