Remove the leaves and stem from the cauliflower, and cut it into small, bite-sized florets.
Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch them for 2-3 minutes, just until they are slightly tender but still crisp. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
Halve the cherry tomatoes and add them to a large mixing bowl.
Peel and dice the cucumber. Add it to the mixing bowl with the cherry tomatoes.
Finely dice the red onion and chop the parsley. Add both to the bowl.
In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to make the dressing.
Once the cauliflower has cooled, add it to the bowl with the other vegetables.
Pour the dressing over the salad and toss gently to combine until everything is well coated.
Crumble the feta cheese over the salad and give it a final toss. Taste and adjust seasoning if needed.
Serve immediately or refrigerate for up to 2 hours to let the flavors meld. Enjoy!
