Preheat your oven to 375°F (190°C).

Place the beef sirloin steak on a clean cutting board and use a sharp knife to slice it into thin strips, approximately 4 inches wide and 6 inches long. If the slices are thick, use a meat mallet to gently pound them thinner to about 1/4 inch.

In a small bowl, combine feta cheese, finely chopped parsley, and minced garlic. Mix well to form the stuffing.
