πŸ“ Instructions

14 steps
1

Preheat your oven to 180Β°C (350Β°F) and line two baking trays with parchment paper.

2

In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold, cubed butter to the bowl.

3

Using your fingers or a pastry cutter, rub the butter into the flour mixture until it resembles fine breadcrumbs.

4

Add the egg yolks, vanilla extract, and cold milk into the mixture. Stir gently until the dough starts to come together.

5

Transfer the dough onto a lightly floured surface and knead gently for about 1-2 minutes until smooth. Avoid overworking the dough.

6

Divide the pastry dough into two portions. Roll out each portion to about 1/4-inch (6mm) thickness using a rolling pin.

7

Using a round cookie cutter (approximately 5cm in diameter), cut out circles of dough and place them on the prepared baking trays.

8

Use a smaller cutter or the back of a spoon to create a shallow indentation in the center of half of the circles. These will be the tops of your pastries.

9

Spoon a small amount of jam onto the center of the plain pastry circles, leaving a small border around the edges.

10

Place a pastry circle with an indentation on top of each jam-filled circle. Gently press the edges together to seal.

11

Sprinkle the tops of the pastries with granulated sugar.

12

Bake in the preheated oven for 12-15 minutes, or until the pastries turn a light golden color.

13

Remove from the oven and allow the pastries to cool on the baking trays for 5 minutes before transferring to a wire rack to cool completely.

14

Serve your English Tea Pastries with a pot of freshly brewed tea and enjoy!
