📝 Instructions

10 steps
1

Preheat your oven to 180°C (350°F) and line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

2

In a large mixing bowl, melt the butter either in the microwave or over low heat on the stovetop.

3

Whisk the melted butter with the brown sugar and vanilla extract until the mixture is smooth and well combined.

4

Add the flour, rolled oats, baking powder, and salt to the bowl. Stir until the ingredients form a crumbly mixture.

5

Set aside approximately 1/3 of the oat mixture for the topping, and press the remaining 2/3 evenly into the bottom of the prepared baking pan using your hands or the back of a spoon.

6

Spread the jam evenly over the pressed base, leaving a small margin around the edges to prevent it from sticking to the pan.

7

Sprinkle the reserved oat mixture over the top of the jam layer, pressing it down lightly to ensure it adheres.

8

Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the jam is bubbling around the edges.

9

Remove from the oven and allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang.

10

Cut into 12 bars and serve. These can be stored in an airtight container at room temperature for up to 3 days.
