Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.
In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it into crumbles as it cooks. Drain any excess fat.
Add the diced onion to the skillet and sauté for 3-4 minutes until softened. Stir in the garlic and cook for an additional 1 minute.
Mix in the taco seasoning and cook for 1 minute, then stir in the can of Rotel, cream of chicken soup, and sour cream. Reduce the heat to low and simmer for 5-7 minutes, stirring occasionally.
