Slice the tomatoes into 1/4-inch thick slices. Sprinkle them with 1 teaspoon of salt and place on paper towels to drain excess moisture.
Blind bake the vegan pie crust according to package instructions until lightly golden. Set aside to cool.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and continue to cook for another 1 to 2 minutes. Remove from heat.
