Indulge in the creamy, fruity decadence of Custard Berry Parfaits—an elegant yet simple dessert that layers velvety homemade custard with the vibrant sweetness of fresh berries and the satisfying crunch of granola. Perfect for summer gatherings or as a light, refreshing treat, this recipe boasts a luscious vanilla custard made from scratch, enhanced with a hint of buttery richness. Juicy, mixed berries like strawberries, blueberries, and raspberries bring bursts of natural flavor, while the granola adds texture and a touch of nutty goodness. Topped with optional whipped cream and a sprig of mint, these parfaits are as beautiful as they are delicious. Ready in just 30 minutes and ideal for make-ahead entertaining, these layered desserts are a crowd-pleasing combination of comfort and sophistication.
In a medium saucepan, whisk together the sugar and cornstarch until combined.
Add the egg yolks to the saucepan and whisk until smooth.
Gradually pour in the milk while whisking continuously to ensure all ingredients are well combined.
Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to bubble. This should take about 5-7 minutes.
Remove the saucepan from heat and stir in the butter and vanilla extract until fully incorporated.
Transfer the custard to a heatproof bowl, cover with plastic wrap (pressing it directly onto the surface of the custard to prevent a skin from forming), and let it cool to room temperature.
While the custard cools, wash and prepare the berries. If using strawberries, hull and slice them.
To assemble the parfaits, spoon a layer of cooled custard into the bottom of 4 serving glasses or jars.
Add a layer of mixed berries on top of the custard, followed by a layer of granola.
Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
If desired, top each parfait with a dollop of whipped cream and garnish with a mint leaf.
Serve immediately or refrigerate until ready to serve.
