Cool, creamy, and bursting with refreshing flavors, Cucumber Mint Raita is the perfect yogurt-based side dish to balance out bold, spicy meals. This quick and easy recipe comes together in just 10 minutes, featuring grated cucumber, fresh mint leaves, and a hint of roasted cumin for a subtle smoky depth. Optional green chili adds a gentle kick, while a sprinkle of sugar rounds out the flavors beautifully. Serve this chilled raita as a soothing accompaniment to biryani, pulao, or rich curries, or offer it as a dip alongside crispy pakoras or samosas. Light, healthy, and irresistibly refreshing, this recipe is a must-have for summer meals and Indian-inspired feasts.
Wash the cucumber thoroughly and peel it. Grate the cucumber using the large holes of a grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and gently squeeze out any excess water. Set aside.
Chop the fresh mint leaves finely. If you're using a green chili, finely chop it as well.
In a mixing bowl, whisk the plain yogurt until smooth.
Add the grated cucumber, chopped mint leaves, salt, ground roasted cumin, sugar, and chopped chili (if using) to the yogurt. Mix well to combine.
Taste and adjust the salt or spices as needed.
Transfer the raita to a serving bowl and garnish with fresh cilantro leaves if desired.
Serve chilled as a side dish with biryani, pulao, or any spicy curry. It can also be served as a cooling dip alongside appetizers like pakoras or samosas.
