Peel and slice the yams into 1/2-inch thick rounds, and set them aside.
Peel, core, and thinly slice the apples, and set them aside.
In a small bowl, mix together the brown sugar, cinnamon, nutmeg, and salt.
Lightly coat the inside of your crock pot with cooking spray to prevent sticking.
Place a layer of yam slices on the bottom of the crock pot, followed by a layer of apples. Sprinkle a portion of the brown sugar mixture over the apples and dot with a few pieces of cubed butter.
Repeat the layering process (yams, apples, brown sugar, butter) until all the ingredients are used, finishing with a layer of apples and brown sugar on top.
Drizzle the maple syrup evenly over the layers. Add the water to the bottom of the crock pot for moisture.
Cover and cook on the LOW setting for 4 hours, or until the yams are tender and easily pierced with a fork.
Stir gently before serving to mix the syrupy juices. Garnish with chopped pecans if desired.
Serve warm as a delicious side dish for any fall or holiday meal.
