Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Meanwhile, dice the pancetta into small cubes. Finely chop the garlic, deseed and finely slice the red chilli, and chop the parsley.

Heat the olive oil in a large frying pan over medium heat. Add the pancetta and cook for 4-5 minutes until crispy and golden, stirring occasionally.

Lower the heat slightly and add the garlic and chilli to the pan. Sauté for 1-2 minutes, stirring constantly to prevent burning.

Add the cooked spaghetti directly into the frying pan with the pancetta, garlic, and chilli. Toss to coat the pasta evenly in the mixture.

Gradually add a few tablespoons of the reserved pasta water to the pan, if needed, to loosen the sauce and help it coat the pasta better.
