📝 Instructions

9 steps
1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2

Drain and rinse the black beans, then set them aside.

3

Dice the red bell pepper and yellow onion into small pieces. Mince the garlic cloves.

4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

5

Add the black beans, ground cumin, chili powder, salt, and black pepper to the skillet. Stir to combine and cook for 2-3 minutes until heated through. Stir in the lime juice and remove from heat.

6

To assemble the burritos, lay a flour tortilla flat. Add about 1/3 cup of the bean mixture to the center of the tortilla, then sprinkle with shredded cheddar cheese. Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

7

Brush the rolled burritos lightly with the remaining olive oil on all sides and place them seam-side down on the prepared baking sheet.

8

Bake in the preheated oven for 20-25 minutes, flipping halfway, until the burritos are golden and crispy on all sides.

9

Remove from the oven and let cool slightly before serving. Top with your favorite toppings like sour cream, salsa, or avocado, and enjoy!
