In a medium-sized heatproof bowl, combine the semi-sweet chocolate chips, heavy cream, and unsalted butter.

Set the bowl over a saucepan of simmering water to create a double boiler. Gently heat the mixture, stirring often, until smooth and fully melted.

Remove the bowl from the heat and stir in the peppermint extract. Let the mixture cool slightly before refrigerating it for 1 to 2 hours, or until firm enough to scoop.
