📝 Instructions

10 steps
1

Preheat your oven to 400°F (200°C).

2

Wash the russet potatoes thoroughly, pat them dry, and prick each potato a few times with a fork.

3

Rub the potatoes with olive oil and place them on a baking sheet. Bake for 50-60 minutes, or until the potatoes are tender and can be easily pierced with a fork.

4

Once the potatoes are cool enough to handle, cut a lengthwise slit on the top of each potato and gently scoop out the flesh into a mixing bowl, leaving a small border inside the skin to create a shell.

5

Mash the potato flesh with a fork or potato masher until smooth. Add the cream cheese, butter, cheddar cheese (reserving a small amount for topping), garlic powder, smoked paprika, salt, and black pepper. Mix until well combined.

6

Fold in the lump crab meat, green onions, and half of the chopped parsley. Be careful not to break up the crab meat too much.

7

Spoon the potato-crab mixture back into the potato shells, mounding it slightly on top.

8

Sprinkle the reserved shredded cheddar cheese on top of each stuffed potato.

9

Return the stuffed potatoes to the baking sheet and bake in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

10

Remove from the oven and garnish with the remaining chopped parsley. Serve warm and enjoy!
