Preheat your oven to 375°F (190°C).

Cut the tops off the tomatoes and set them aside. Scoop out the seeds and pulp with a spoon, being careful not to puncture the sides. Reserve the tomato pulp in a bowl.

Sprinkle the inside of the hollowed-out tomatoes with a pinch of salt and place them upside down on a plate to drain any excess liquid.

In a heatproof bowl, combine the couscous and boiling water. Cover tightly with a lid or plastic wrap and let it sit for 5 minutes until the couscous absorbs the water.

Fluff the couscous with a fork, then add 1 tablespoon of olive oil, finely chopped fresh parsley, fresh mint, minced garlic, lemon juice, ground cumin, salt, black pepper, and the reserved tomato pulp. Mix until well combined.
