Preheat your oven to 375°F (190°C).
Cut the tops off the tomatoes and set them aside. Scoop out the seeds and pulp with a spoon, being careful not to puncture the sides. Reserve the tomato pulp in a bowl.
Sprinkle the inside of the hollowed-out tomatoes with a pinch of salt and place them upside down on a plate to drain any excess liquid.
In a heatproof bowl, combine the couscous and boiling water. Cover tightly with a lid or plastic wrap and let it sit for 5 minutes until the couscous absorbs the water.
Fluff the couscous with a fork, then add 1 tablespoon of olive oil, finely chopped fresh parsley, fresh mint, minced garlic, lemon juice, ground cumin, salt, black pepper, and the reserved tomato pulp. Mix until well combined.
Drizzle a small amount of olive oil in the bottom of a baking dish. Place the hollowed-out tomatoes upright in the dish.
Carefully spoon the couscous mixture into each tomato, pressing it down gently to fill them completely. If desired, sprinkle a little grated Parmesan cheese on top of each stuffed tomato.
Replace the tops of the tomatoes and drizzle the remaining olive oil over them.
Bake in the preheated oven for 20 minutes, or until the tomatoes are tender and the stuffing is heated through.
