📝 Instructions

8 steps
1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

2

Peel and cube the russet potatoes into 1-inch pieces. Slice the carrots into 1/2-inch rounds. Chop the onion into chunks. Mince the garlic.

3

In a large mixing bowl, toss together the potatoes, carrots, onion, and garlic with 2 tablespoons of olive oil, 1/2 teaspoon of dried thyme, 1/2 teaspoon of paprika, and a pinch of salt and pepper. Spread the vegetables evenly in the prepared baking dish.

4

Season the chicken breasts with the remaining thyme, oregano, paprika, salt, and pepper. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat and sear the chicken for 2 minutes per side until golden. (The chicken will not be fully cooked.) Place the seared chicken on top of the vegetable mixture in the baking dish.

5

In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until bubbly. Gradually pour in the chicken broth, whisking constantly to prevent lumps. Simmer for 2-3 minutes until the mixture thickens slightly.

6

Stir in the heavy cream and grated Parmesan cheese. Taste and adjust seasoning if necessary. Pour the creamy sauce evenly over the chicken and vegetables.

7

Cover the baking dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (165°F internal temperature) and the vegetables are tender.

8

Garnish with freshly chopped parsley before serving. Enjoy your homemade Countryside Chicken Bake!
