📝 Instructions

8 steps
1

Cook the egg noodles according to the package instructions. Drain, rinse with cold water, and toss with 1 teaspoon of sesame oil to prevent sticking. Set aside.

2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.

3

In the same skillet, add another tablespoon of vegetable oil. Sauté the chopped onion and minced garlic for 2-3 minutes until fragrant and slightly softened.

4

Add the shredded corned beef to the skillet. Stir well and cook for 3-4 minutes until heated through.

5

Return the cooked potatoes to the skillet. Stir to combine and season with a pinch of salt, black pepper, and optional red chili flakes.

6

Push the corned beef mixture to one side of the skillet. Add the cooked noodles to the other side of the skillet and pour the soy sauce and oyster sauce over them. Toss the noodles to coat them evenly in the sauces.

7

Mix the noodles with the corned beef hash mixture, letting all the ingredients combine evenly. Cook for another 2-3 minutes, stirring occasionally.

8

Sprinkle sliced scallions over the top before serving and drizzle with an additional dash of sesame oil for extra flavor.
