Preheat your oven to 325°F (165°C). Line two baking sheets with parchment paper or silicone baking mats.
In a large mixing bowl, combine the sweetened shredded coconut, corn flakes cereal, granulated sugar, and salt. Mix until well combined.
In a separate small bowl, whisk the egg whites until frothy but not stiff peaks. Add the vanilla extract and whisk for a few more seconds.
Pour the egg white mixture into the dry ingredients and gently fold it in until everything is evenly coated and sticky.
