Rinse the navy beans under cold water and remove any stones or debris.

In a large pot, cover the beans with cold water and let them soak overnight or for at least 8 hours.

Drain and rinse the beans, then place them back into the pot.

Add 1 liter of water and bring to a boil. Reduce heat and simmer for about 1 hour, or until the beans are tender but not mushy. Drain the beans, reserving the cooking liquid.

Preheat your oven to 150°C (300°F).

In a large oven-safe pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
