📝 Instructions

9 steps
1

In a medium saucepan, melt the semisweet chocolate chips and butter over low heat, stirring constantly until smooth. Remove from heat and let the mixture cool slightly to avoid melting the marshmallows in the next step.

2

Stir in the vanilla extract to the melted chocolate mixture.

3

In a large mixing bowl, combine the chopped nuts and miniature colored marshmallows.

4

Pour the slightly cooled chocolate mixture over the marshmallow and nut mixture. Gently stir until all the marshmallows and nuts are well coated with the chocolate.

5

Lay out two large sheets of wax paper or parchment paper on a flat surface. Sprinkle 1/2 cup of the shredded coconut down the center of each sheet.

6

Divide the chocolate-marshmallow mixture into two equal portions. Place each portion on the coconut-covered wax paper and shape it into a log, approximately 10-12 inches long.

7

Sprinkle the remaining shredded coconut over the tops of the logs. Roll each log tightly in the wax paper, twisting the ends to seal.

8

Refrigerate the logs for at least 2 hours or until firm.

9

Once chilled, unwrap the logs and slice them into 1/2-inch thick cookies. Serve and enjoy!
