πŸ“ Instructions

11 steps
1

Line an 8-inch (20cm) square baking pan with parchment paper, leaving some overhang for easy removal later.

2

Place the biscuits in a large ziplock bag and gently crush them using a rolling pin until you have a mixture of small chunks and crumbs. Set aside.

3

In a medium saucepan, melt the butter over low heat. Once melted, add the sugar and stir until dissolved.

4

Add the cocoa powder and vanilla extract to the butter mixture, stirring until combined and smooth. Remove from heat.

5

In a large mixing bowl, combine the crushed biscuits, shredded coconut, and the chocolate mixture. Mix well to coat all the dry ingredients evenly.

6

Transfer the mixture into the prepared baking pan. Use the back of a spoon or spatula to press it down firmly and evenly into the pan. Place in the fridge to chill while you prepare the chocolate topping.

7

For the topping, melt the dark chocolate and heavy cream together in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth and glossy. Alternatively, use a microwave in small bursts, stirring regularly to avoid burning.

8

Remove the chilled base from the fridge and pour the melted chocolate topping over it. Spread evenly using a spatula or the back of a spoon.

9

Return the pan to the fridge and allow the slice to set completely, about 2 hours.

10

Once set, carefully remove the slice from the pan using the parchment paper overhang. Cut into 12 squares or preferred sizes.

11

Store in an airtight container in the fridge for up to 1 week. Serve chilled or at room temperature.
