Preheat your oven to 220Β°C (428Β°F).
Begin by greasing six ramekins generously with butter to prevent sticking.
Dust the inside of each ramekin with cocoa powder, shaking out the excess.
In a heatproof bowl over a pot of simmering water, gently melt the dark chocolate and butter together. Stir occasionally until smooth and glossy. Remove from heat and let it cool slightly.
In a separate large mixing bowl, whisk together the caster sugar, eggs, and egg yolks using an electric mixer until the mixture is pale and thick, about 3-4 minutes.
Gently fold the melted chocolate and butter mixture into the egg mixture using a spatula.
Sift the all-purpose flour into the mixture and fold gently until just combined. Be careful not to overmix.
Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
Place the ramekins on a baking sheet and bake in the preheated oven for 8-10 minutes, or until the edges are cooked but the center remains soft and slightly jiggly.
Remove from the oven and let the fondants rest for 1 minute before loosening the edges with a butter knife.
Carefully turn each fondant onto a plate and gently lift the ramekin. Serve immediately, optionally with a scoop of vanilla ice cream or a dusting of icing sugar.
