Thinly slice the chicken breast into bite-sized strips. In a small bowl, mix 1 tablespoon of soy sauce, 2 teaspoons of cornstarch, and 1 teaspoon of sesame oil. Add the chicken to the mixture and marinate for 15 minutes.

Heat the remaining 1 tablespoon of vegetable oil in the skillet. Add the minced garlic and ginger and stir-fry for 30 seconds until fragrant. Add the carrots, cabbage, and green onions and stir-fry for 2-3 minutes until the vegetables are tender but still crisp.

Return the chicken to the skillet, followed by the crispy noodles. Pour the sauce over everything and gently toss to combine, ensuring the noodles are well-coated.

Cook for another 1-2 minutes, allowing the sauce to thicken slightly. Remove from heat and serve immediately. Garnish with additional green onions, if desired.
