Wash the Chinese cabbage and slice it into thin strips. Trim the ends of the snow peas and rinse them under cold water. Clean the mushrooms with a damp paper towel and slice them thinly.
Mince the garlic and finely grate the ginger.
In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, and water. Set aside.
Heat a wok or large skillet over medium-high heat. Add the vegetable oil and allow it to heat until shimmering.
Add the garlic and ginger to the wok and stir-fry for 30 seconds until fragrant.
Add the Chinese cabbage and mushrooms to the wok. Stir-fry for 2-3 minutes, allowing the vegetables to soften slightly.
Add the snow peas to the wok and stir-fry for an additional 2 minutes, keeping the vegetables tender-crisp.
Give the sauce another stir and pour it into the wok. Stir well to coat all the vegetables in the sauce and cook for 1-2 minutes until slightly thickened.
Drizzle the sesame oil over the stir fry and season with salt and black pepper to taste.
Transfer the stir fry to a serving dish and sprinkle with sesame seeds for garnish.
Serve immediately with steamed rice or noodles.
